Ingredients
- 8 pears
- 750 ml red wine Shiraz
- 3 cloves garlic
- 2 cinnamon sticks
- 1 tbsp pure maple syrup
- 1 orange zest
- 1 lemon zest
- ¼ tsp ground nutmeg
Method
- To ensure pears stand upright, cut a straight slice off the bottom.
- Place pears in a large pot making sure they are tightly packed together and sitting upright.
- Pour the red wine over the tops of the pears. Add cloves, cinnamon sticks, sugar, orange zest and lemon zest, nutmeg.
- Bring to the boil and then reduce heat to simmer gently for approximately 45 – 60 minutes, or until pears are soft but not overcooked. You can test the pears by poking with a skewer.
- Remove the poached pears carefully using a large spoon so you do not break the stalks.
Serving suggestions
- Dessert: Serve pears with reduced fat Greek yoghurt for a healthy dessert.
- Main meal: Serve sliced or mashed Shiraz pears with fish or white meat such as pork, chicken or turkey.
