Breakfast toast with egg and avocado salsa on Bürgen® Soy-Lin®
- 1/2 avocado peeled and cubed
- 1 roma tomato seeded and finely diced
- 1 tbsp lime juice
- 1 tbsp fresh coriander (cilantro) finely diced
- 2 tsp sweet chilli sauce
- 2 poached eggs
- Burgen Soy-lin bread toasted
- To make the salsa, combine avocado, tomato, lime juice and coriander in a small bowl and mix lightly.
- Serve salsa with a poached egg, toast and a drizzle of sweet chilli sauce.
