Pork Salsa Salad

Ingredients
- ½ green capsicum (pepper) diced
- ½ red capsicum (pepper) diced
- 2 tomatoes diced
- 2 spring onions finely chopped
- ½ cup low GI brown rice cooked, or corn
- ½ cup black beans rinsed, drained
- 200 g lean pork fillet cooked, shredded
- ½ avocado chopped
- ¼ cup fresh coriander (cilantro) chopped
Dressing
- ½ tbsp olive oil
- 1 tbsp lime juice
- sea salt and ground black pepper
Method
- In a small bowl or jar, add olive oil, lime juice, salt and pepper. Mix or shake well.
- In a large bowl add all ingredients (except dressing) and toss gently.
- Drizzle over dressing and mix well to coat allthe salad ingredients.
