Pork Salsa Salad

Ingredients

  • ½ green capsicum (pepper) diced
  • ½ red capsicum (pepper) diced
  • 2 tomatoes diced
  • 2 spring onions finely chopped
  • ½ cup low GI brown rice cooked, or corn
  • ½ cup black beans rinsed, drained 
  • 200 g lean pork fillet cooked, shredded
  • ½ avocado chopped
  • ¼ cup fresh coriander (cilantro) chopped

Dressing

  • ½ tbsp olive oil
  • 1 tbsp lime juice
  • sea salt and ground black pepper

Method

  • In a small bowl or jar, add olive oil, lime juice, salt and pepper. Mix or shake well.
  • In a large bowl add all ingredients (except dressing) and toss gently.
  • Drizzle over dressing and mix well to coat allthe salad ingredients.
