Ingredients

  • 200 g hot smoked salmon
  • 4 tbsp ricotta cheese
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • 2 tbsp fresh chives Finely chopped
  • 2 tsp baby capers
  • Lebanese cucumber Thinly sliced
  • watercress

Method

  • Flake salmon. Combine ricotta, lemon juice and zest, chives and capers. Gently combine with salmon. Pile on slices of bread and top with cucumber and watercress. Top with another slice of bread.
