Asparagus Niçoise Salad

Ingredients

  • 1 bunch asparagus trimmed and chopped into pieces
  • 4 cups mixed salad leaves washed
  • 1 bunch Italian leaf parsley chopped
  • 2 cucumbers small, chopped
  • 4 tomatoes ripe, chopped
  • 2 red capsicum (pepper) chopped
  • 1 red (Spanish) onion thinly sliced
  • 4 eggs hard-cooked eggs, peeled and quartered
  • 285 g tuna in spring water
  • 12 black olives pitted and halved
  • 2 clove garlic cut in half

Vinaigrette

  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 2 tbsp extra virgin olive oil

Method

Vinaigrette

  • Mix the red wine vinegar and mustard together and then whisk in the olive oil until you get a creamy, smooth consistency.

Salad

  • Use the garlic clove halves to rub the inside of a large salad bowl. This will give the salad a lovely flavour.
  • Add all of other salad ingredients to the bowl and toss gently to combine.  
  • Pour the salad dressing over the salad and mix gently to combine.

Notes

Mix it up:
Barbecue: Swap tuna for barbecued tuna or salmon steaks
Vegetarian: substitute tuna for 1 cup cannellini beans or chickpeas
