Seasonal Green Beans

Ingredients

  • 500 g green beans
  • 40 g parmesan cheese shaved
  • 2 tbsp lemon juice
  • 1 ½ tbsp extra virgin olive oil
  • 1 tbsp low GI honey
  • 1 tsp fresh thyme
  • sea salt and ground black pepper

Method

  • Trim the tops of the beans. Steam or blanch beans for approximately 3-5 minutes or until tender. Rinse in cold water to stop the cooking process then drain thoroughly and pat dry with a clean tea towel or paper towel.
  • For the dressing: add olive oil, lemon juice, honey, salt, pepper and thyme to a small bowl or jar. Mix or shake well.
  • Add cooked beans to a large bowl. Drizzle over the dressing and top with parmesan shavings.

Notes

Serving Suggestion: scatter with chopped walnuts for extra crunch and good fats.
