Breakfast toast with egg and avocado salsa on Bürgen® Soy-Lin®

Ingredients

  • ½ avocado peeled and cubed
  • 1 roma tomato seeded and finely diced
  • 1 tbsp lime juice
  • 1 tbsp fresh coriander (cilantro) finely diced
  • 2 tsp sweet chilli sauce
  • 2 eggs poached
  • 2 slices Bürgen® Soy-Lin® Bread toasted

Method

  • To make the salsa, combine avocado, tomato, lime juice and coriander in a small bowl and mix lightly.
  • Serve salsa with a poached egg, toast and a drizzle of sweet chilli sauce.
