Low GI Air Fryer Nachos

Ingredients

  • 2 MISSION Low Gi + Protein Wrap cut into triangles
  • 400 g black beans can, drained
  • cup reduced fat tasty cheese
  • ½ cup pickled jalapeño sliced
  • 1 white onion diced
  • 2 tomatoes diced
  • 1 red capsicum (pepper) diced
  • 1 small red chilli finely chopped
  • ½ avocado medium, ripe 
  • 1 clove garlic
  • 1 tbsp lime juice
  • 2 tbsp fresh coriander (cilantro) extra to serve
  • ½ cup reduced fat greek yoghurt
Low GI Air Fryer Nachos

Method

  • Place a sheet of baking paper into the air fryer. In a single layer, add the tortilla triangles into the air fryer basket, overlapping them so there are no gaps.
  • Top the triangles with the beans, onion, tomato, capsicum, jalapeños and cheese.
  • Place in the air fryer and cook at 160C for five minutes or until the cheese has melted.
  • Whilst nachos are cooking, make guacamole by mashing & combining avocado, chilli, garlic, lime and coriander in a small bowl.
  • Remove nachos from the basket, top with guacamole, Greek yoghurt and coriander and enjoy!

Notes

Tip: Using lime juice helps to lower the glycemic index of a meal!
