Protein Patties with Spiced Sweet Potato

Ingredients

Protein Patties

  • 500 g lean chicken mince or turkey mince
  • 1 tsp olive oil
  • 1 brown onion large, finely diced
  • 1 carrot large, peeled and grated
  • 2 clove garlic finely diced
  • sea salt and ground black pepper
  • 1 tsp ground smoked paprika
  • 2 tbsp fresh thyme chopped, or rosemary
  • 2 eggs

Spicy Sweet Potato

  • 2 sweet potato medium
  • ½ tsp ground cumin
  • ½ tsp ground smoked paprika
  • 1 tbsp olive oil
  • sea salt and ground black pepper

Method

Protein Balls/Patties

  • Using your hands, mix all ingredients in a large bowl until well incorporated. Roll into 8 small balls or if you would rather patties, flatten balls.
  • Heat olive oil in a non-stick fry pan. Add 4 patties and pan fry until golden brown on one side (approx. 4 minutes). Turn patties and cook on the other side until golden brown (approx.. 4 minutes). Repeat with the remaining 4 patties.

Spicy Sweet Potato

  • Preheat oven to 180°C.
  • Cut sweet potato into cubes and season cumin, paprika, salt, black pepper and olive oil.
  • Add to a baking tray lined with baking paper. Bake in the oven for 20-25 minutes.
  • Serve patties with sweet potato and a green salad or green vegetables such as broccolini.
