Ingredients
- 2 slices Bรผrgenยฎ Wholemeal & Seeds bread
- ยฝ cup skinless chicken breasts poached and shredded
- ground white pepper
- 2 tsp reduced fat mayonnaise
- ยผ cup mango finely chopped
- ยผ cup fresh coriander (cilantro)
- 2 tsp red (Spanish) onion finely chopped
- ยฝ tsp lime juice
- 1 pinch chilli powder (optional)
- 1 iceberg lettuce to serve
Method
- Season shredded chicken meat with ground white pepper.
- Spread the mayonnaise over the bread slices and top with the chicken.
- Combine remaining ingredients in a bowl and spoon over the sandwich. Serve with a wedge of lettuce on the side.
