Ingredients

  • 2 slices Bürgen® Wholemeal & Seeds bread
  • ½ cup skinless chicken breasts poached and shredded
  • ground white pepper
  • 2 tsp reduced fat mayonnaise
  • ¼ cup mango finely chopped
  • ¼ cup fresh coriander (cilantro)
  • 2 tsp red (Spanish) onion finely chopped
  • ½ tsp lime juice
  • 1 pinch chilli powder (optional)
  • 1 iceberg lettuce to serve

Method

  • Season shredded chicken meat with ground white pepper.
  • Spread the mayonnaise over the bread slices and top with the chicken.
  • Combine remaining ingredients in a bowl and spoon over the sandwich. Serve with a wedge of lettuce on the side.
