Ham, Goat’s Cheese & Beetroot Toasties

Ingredients

  • 8 slices Helgas Lower Carb 5 Seed Bread
  • 40 g butter softened
  • 100 g goats cheese soft
  • ½ cup beetroot chutney (160g)
  • 100 g sliced lean leg ham sliced
  • 60 g fresh rocket leaves

Method

  • Lay a sheet of baking paper on a chopping board; top with bread slices. Spread slices with butter. Turn 4 slices so buttered side faces down; spread with cheese. Top with chutney, ham and rocket. Sandwich with remaining bread slices, buttered-side up.
  • Preheat a sandwich press. Toast sandwiches, in batches, in hot sandwich press for 2 minutes or until golden and crisp.
